How to Cook Chicken Marylands

Chicken marylands are skin-on, bone-in cuts known for their rich flavour and tenderness. They’re great for oven roasting, grilling, or pan-frying.

  1. Preheat your oven to 180°C fan-forced
  2. Pat the marylands dry and season generously with salt, pepper, and your favourite herbs or spices.
  3. Place the marylands skin-side up on a lined baking tray or roasting dish.
  4. Roast for 40–45 minutes, turning halfway through, until the skin is golden and crispy, and the meat is cooked through (internal temperature should reach 75°C).
  5. Optional: For extra crispy skin, broil/grill for the last 3–5 minutes.
  1. Preheat your grill or BBQ to medium-high heat.
  2. Grill the marylands for about 6–8 minutes per side, turning occasionally until cooked through and charred to your liking.
