Cooking Guide
- 01 Free Range Rolled Chicken
Our Mt Barker free-range chicken is carefully rolled and available plain or filled with your choice of our homemade Italian or Fruity Stuffing. Tender, juicy, and full of flavour, it makes a beautiful centrepiece for your Christmas table. Prepared fresh with care by P. Princi Butchers, continuing our proud tradition of quality since 1950. Available as a Christmas special only. This will be a frozen product and you will need to allow 3 days to thaw.
- Before Cooking: Remove the rolled chicken from the refrigerator approximately 30–45 minutes before cooking. Pat the skin dry with paper towel, then rub generously with softened butter and season with salt and pepper.
- Cooking: Preheat oven to 200°C fan-forced. Place the chicken seam-side down in a roasting tray and cook for 15 minutes. Reduce the oven to 180°C fan-forced and continue cooking for approximately 1 hour 15–30 minutes, depending on the exact weight. The chicken is ready when the thickest part reaches 75°C on a meat thermometer.
- Resting: Remove from the oven and loosely cover with foil. Allow to rest for 15–20 minutes before removing the string and slicing.
Tip: Cooking times are a guide only. We recommend using a meat thermometer to ensure the chicken and stuffing are thoroughly cooked
