How to Cook: Chicken & Chive Thin Sausages

For best results, cook your beef BBQ sausages on a low to medium heat to ensure they stay juicy and don’t split.

  • 01 Bring To Room Temperature
  • 02 Preheat Your Cooking Surface
  • 03 Optional: Lightly Score The Skins
  • 04 Cook Gently
  • 05 Check For Doneness
  • 06 Rest Before Serving

Remove sausages from the fridge 10 – 15 minutes before cooking to ensure even cooking.

  • Barbecue: Light a low–medium zone (around 150 – 160 °C).
  • Pan: Warm a non-stick or heavy-based frypan over low–medium heat and brush with a little oil.

Make two or three shallow diagonal cuts on each sausage to help release steam and prevent splitting.

  • Place sausages on the grill or in the pan.
  • Cook for 2 – 3 minutes per side, turning every couple of minutes so they brown evenly.
  • Total cooking time should be around 6 – 8 minutes.

Insert a meat thermometer into the centre of a sausage— it should read 75 °C before you remove them.

Transfer to a plate, cover loosely with foil, and rest for 2–3 minutes to let the juices redistribute.

Serve your chicken & chive sausages with fresh bread, a crisp salad or your favourite chutney for a flavoursome meal!

Can I take sausages out of the skin?

Absolutely! You can remove the sausage meat from the casing and use it in a pasta sauce, or form it into small burger patties. Both options work beautifully and add great flavour to your dishes.

How long do sausages last?

Fresh sausages should be consumed within 2–3 days when stored in the fridge at or below 4°C.

Do your sausages contain preservatives?

Most of our sausages contain only a very small amount of preservative, just enough to maintain freshness. We also offer preservative-free sausages, which can be ordered by calling the store. Please note that the minimum order for preservative-free sausages is 5 kg.

Are your sausages gluten free?

Yes, all our sausages are gluten free.
