How to Cook: Thick English Pork Sausages

Thick English pork sausages are classic and hearty — cooking them slowly ensures they stay juicy and full of flavour.

  • 01 Bring To Room Temperature
  • 02 Preheat Your Cooking Surface
  • 03 Score The Skins (Optional)
  • 04 Cook Slowly
  • 05 Check For Doneness
  • 06 Rest Before Serving

Take sausages out of the fridge about 10–15 minutes before cooking to help them cook evenly.

  • Barbecue: Set to low to medium heat (around 150–160 °C).
  • Pan: Warm a heavy-based frypan over low–medium heat, adding a little oil if needed.

Make a few shallow diagonal cuts in the sausages to help prevent splitting and ensure even cooking.

  • Place sausages on the grill or in the pan.
  • Cook for 4–5 minutes per side, turning regularly to brown all sides evenly.
  • Total cook time will be around 12–15 minutes, depending on thickness.

Use a meat thermometer to check that the internal temperature reaches 75 °C, or cut open to make sure the sausage is cooked through with no pink inside.

Let sausages rest for 3–4 minutes under loose foil to keep them juicy before serving.

Can I take sausages out of the skin?

Absolutely! You can remove the sausage meat from the casing and use it in a pasta sauce, or form it into small burger patties. Both options work beautifully and add great flavour to your dishes.

How long do sausages last?

Fresh sausages should be consumed within 2–3 days when stored in the fridge at or below 4°C.

Do your sausages contain preservatives?

Most of our sausages contain only a very small amount of preservative, just enough to maintain freshness. We also offer preservative-free sausages, which can be ordered by calling the store. Please note that the minimum order for preservative-free sausages is 5 kg.

Are your sausages gluten free?

Yes, all our sausages are gluten free.
