Take sausages out of the fridge 10–15 minutes before cooking so they heat through evenly.

  • Barbecue: Set up a low–medium heat zone (around 150–160 °C).
  • Pan: Warm a heavy-based frypan or grill pan over low–medium heat; brush with a little oil if it’s not non-stick.

Lightly make two or three shallow diagonal cuts in each sausage. This helps release steam and prevents splitting.

  • Place sausages on the grill or in the pan.
  • Cook for 4–5 minutes per side, turning regularly to brown all over.
  • Total time will be about 12–15 minutes, depending on thickness.

Insert a meat thermometer into the centre of a sausage—it should read 75 °C before you remove them.

Transfer to a plate, tent loosely with foil, and rest for 3–4 minutes. This lets the juices redistribute and keeps them succulent.

TIP: These are also great to use in Pasta Sauce, all you need to do is:

  • Remove the casings: Cut down one side of each sausage and peel off the skins.
  • Crumble and brown: In a saucepan over medium heat, add a drizzle of olive oil and the sausage meat. Break it up with a wooden spoon and cook until golden-brown.
  • Simmer in sauce: Add your crushed tomatoes (or tomato passata), garlic, herbs and a splash of red wine or stock. Let it simmer for 15–20 minutes until flavours meld.

Serve the sauce tossed through your favourite pasta, topped with freshly grated Parmesan and a sprinkle of basil. Enjoy!

Can I take sausages out of the skin?

Absolutely! You can remove the sausage meat from the casing and use it in a pasta sauce, or form it into small burger patties. Both options work beautifully and add great flavour to your dishes.

How long do sausages last?

Fresh sausages should be consumed within 2–3 days when stored in the fridge at or below 4°C.

Do your sausages contain preservatives?

Most of our sausages contain only a very small amount of preservative, just enough to maintain freshness. We also offer preservative-free sausages, which can be ordered by calling the store. Please note that the minimum order for preservative-free sausages is 5 kg.

Are your sausages gluten free?

Yes, all our sausages are gluten free.
