How to Cook: Mild Italian (Thin) Sausages

Mild Italian thin sausages are perfect for a quick, flavourful meal. To get that golden-brown exterior and juicy centre, follow these simple steps

  • 01 Bring To Room Temperature
  • 02 Preheat Your Cooking Surface
  • 03 Score The Skins (Optional)
  • 04 Cook Gently
  • 05 Check For Doneness
  • 06 Rest Before Serving

Remove the sausages from the fridge about 10–15 minutes before cooking. This helps them cook through evenly.

  • Barbecue: Light a low–medium heat zone (around 150–160 °C).
  • Pan: Warm a non-stick or heavy-based frypan over low–medium heat. Lightly brush with oil if needed.

Make two or three shallow diagonal cuts in each sausage. This releases steam and helps prevent the skins from splitting.

  • Place sausages on the grill or in the pan.
  • Cook for 2–3 minutes per side, turning every couple of minutes so each side browns evenly.
  • Total cooking time should be roughly 6–8 minutes, depending on exact thickness.

Use a meat thermometer to ensure the internal temperature reaches 75 °C at the centre.

Transfer sausages to a plate, cover loosely with foil, and rest for 2–3 minutes. This allows the juices to redistribute and keeps them succulent.

Can I take sausages out of the skin?

Absolutely! You can remove the sausage meat from the casing and use it in a pasta sauce, or form it into small burger patties. Both options work beautifully and add great flavour to your dishes.

How long do sausages last?

Fresh sausages should be consumed within 2–3 days when stored in the fridge at or below 4°C.

Do your sausages contain preservatives?

Most of our sausages contain only a very small amount of preservative, just enough to maintain freshness. We also offer preservative-free sausages, which can be ordered by calling the store. Please note that the minimum order for preservative-free sausages is 5 kg.

Are your sausages gluten free?
