How to Cook: Pork & Fennel (Thin) Sausages

Pork & fennel thin sausages are delicately flavoured and cook quickly, making them perfect for a tasty snack or meal. Here’s how to get the best results

  • 01 Bring To Room Temperature
  • 02 Preheat Your Cooking Surface
  • 03 Optional: Score The Skins
  • 04 Cook Gently

  • 06 Rest Before Serving

Take sausages out of the fridge about 10–15 minutes before cooking to ensure even cooking.

  • Barbecue: Set to low to medium heat (around 150–160 °C).
  • Pan: Warm a non-stick or heavy-based frypan over low–medium heat. Add a light brush of oil if needed.

Make two or three shallow diagonal cuts in each sausage to prevent splitting and help cook evenly.

  • Place sausages on the grill or in the pan.
  • Cook for 2–3 minutes per side, turning regularly to brown evenly.
  • Total cooking time should be around 6–8 minutes, depending on thickness.

Make sure the internal temperature reaches 75 °C. The sausages should be cooked through with no pink inside.

Let sausages rest for 2–3 minutes after cooking to lock in their juices.

Can I take sausages out of the skin?

Absolutely! You can remove the sausage meat from the casing and use it in a pasta sauce, or form it into small burger patties. Both options work beautifully and add great flavour to your dishes.

How long do sausages last?

Fresh sausages should be consumed within 2–3 days when stored in the fridge at or below 4°C.

Do your sausages contain preservatives?

Most of our sausages contain only a very small amount of preservative, just enough to maintain freshness. We also offer preservative-free sausages, which can be ordered by calling the store. Please note that the minimum order for preservative-free sausages is 5 kg.

Are your sausages gluten free?
