How to Cook: Hot Italian (Thick) Sausages

Hot Italian thick sausages are bold, spicy, and packed with flavour — ideal for grilling, pan-frying, or adding to hearty pasta dishes. Here’s how to cook them perfectly

  • 01 Bring To Room Temperature
  • 02 Preheat Your Cooking Surface
  • 03 Score The Skins (Optional)
  • 04 Cook Slowly And Evenly

Remove sausages from the fridge about 10–15 minutes before cooking to help them cook evenly.

  • BBQ: Preheat to a low–medium heat (around 150–160 °C).
  • Pan: Heat a heavy-based frypan over low–medium heat. Add a little oil if needed.

Lightly score each sausage with 2–3 shallow diagonal cuts to prevent splitting and help them cook through.

  • Place sausages on the grill or pan.
  • Cook for 4–5 minutes per side, turning often to ensure even browning.
  • Total cook time should be around 12–15 minutes, depending on thickness.

Ensure the internal temperature reaches 75 °C. Use a meat thermometer or cut one open to check there's no pink in the centre.

Transfer sausages to a plate, cover loosely with foil, and rest for 3–4 minutes to lock in juices.

Tip: Use in Pasta Sauce

Hot Italian thick sausages are also perfect out of the casing. Just remove the skins, crumble the meat into a pan, and brown before adding to your favourite tomato-based pasta sauce for a spicy, savoury twist.

Enjoy with grilled capsicum, crusty bread, or tossed through penne with fresh basil and Parmesan!

Can I take sausages out of the skin?

Absolutely! You can remove the sausage meat from the casing and use it in a pasta sauce, or form it into small burger patties. Both options work beautifully and add great flavour to your dishes.

How long do sausages last?

Fresh sausages should be consumed within 2–3 days when stored in the fridge at or below 4°C.

Do your sausages contain preservatives?

Most of our sausages contain only a very small amount of preservative, just enough to maintain freshness. We also offer preservative-free sausages, which can be ordered by calling the store. Please note that the minimum order for preservative-free sausages is 5 kg.

Are your sausages gluten free?

Yes, all our sausages are gluten free.
