How to Cook Goat (Plain Pieces)

Heat 1–2 tbsp olive oil in a heavy-based pot or Dutch oven over medium heat. Add 1–2 chopped onions and cook until softened. Brown 1 kg of goat pieces on all sides to lock in flavour.

Stir in minced garlic (2–3 cloves), grated ginger (optional), and spices of your choice:

Mediterranean: rosemary, oregano, lemon zest

Indian: turmeric, cumin, coriander, garam masala

Caribbean: thyme, allspice, chili

Pour in enough stock, water, or crushed tomatoes to just cover the meat.

Simmer gently on low heat for 2.5–3 hours on the stovetop (or transfer to a slow cooker for 6–8 hours on low / 4–5 hours on high) until the meat is tender. For oven braising, cover in a roasting dish and cook at 160 °C for 2.5–3 hours.

Garnish with fresh herbs if desired and serve with rice, couscous, flatbread, or roasted vegetables for a hearty meal.
