Preheat oven to 180 °C (or slow cooker on low). Chop 2–4 potatoes, 1 red capsicum, 1 zucchini, and roughly ½ cup semi sun-dried tomatoes. Toss the veggies in 1 tbsp olive oil, salt, and pepper.
Place 1 kg Italian-style marinated goat in a roasting pan or slow cooker. Scatter the prepared vegetables and sun-dried tomatoes around the meat.
Oven: Cover and roast for 1 hr, then uncover and roast another 15–20 min to brown.
Slow cooker: Cook low 6–7 hrs (or high 3–4 hrs) until tender.
Optional BBQ/Grill: Thread goat pieces and firmer veggies (like potatoes or sweet potato slices) onto skewers. Brush with extra marinade or 1 tbsp olive oil, then grill 8–10 min per side until cooked through.
Let goat rest 5 min, then serve hot, spooning over pan juices. Garnish with fresh herbs and enjoy with crusty bread, polenta, or a fresh salad.
