Pan-Seared Veal Chops with Garlic & Herb Butter

Take 2 veal chops (200–250 g each) out of the fridge 20 minutes before cooking. Pat dry and season both sides generously with salt and freshly ground black pepper.
Warm 2 tbsp olive oil in a heavy skillet over medium-high heat until shimmering.
Sear the chops: Add the veal chops and cook undisturbed for 4–5 minutes until golden brown. Flip and cook the other side for 3–4 minutes.
Reduce heat to medium. Add 2 tbsp butter, 2 crushed garlic cloves, and 2 sprigs of thyme or rosemary. Spoon the melted butter over the chops continuously for 2–3 minutes to infuse flavour and keep them juicy.
Remove chops from the pan and rest for 5 minutes. Serve with lemon wedges and your choice of sides, such as seasonal vegetables, creamy mash, or fresh salad
