Take pre-crumbed gluten-free French cutlets from P.Princi Butchers out of the fridge 20 minutes before cooking.
Heat 2 tbsp oil (canola or light olive oil) in a frying pan over medium heat. Add 1 tbsp butter and 2 lightly crushed garlic cloves to infuse flavour.
Once the butter melts and garlic is fragrant, add the cutlets. Fry 3–4 minutes per side until golden and cooked through, keeping them mostly still to maintain a crisp crumb.
Transfer cutlets to a plate and let rest for 2 minutes.
Serve hot with lemon wedges and your favourite sides like roasted vegetables, mashed potatoes, or a fresh salad.

Are your lambs grass-fed or grain-fed, and where are they sourced?
Our lambs are grass-fed and come from a private farm at Treeton, located just 10 km inland from Cowaramup in the South West of Western Australia.
How long will fresh lamb last in the fridge?
Fresh lamb should be consumed within 2–3 days when stored in the fridge at or below 4°C. For longer storage, freezing is recommended.
Can lamb be frozen?
Yes, lamb can be frozen. Wrap it tightly in freezer-safe packaging or butcher’s paper and store at -18°C or below. Thaw in the refrigerator overnight for the best results.
