How to Cook a Beef Blade Roast

Allow roughly 1 hour per kg of meat.

  • 01 Preparation
  • 02 Roasting
  • 03 Resting & Serving
  • Bring roast to room temp (30–60 mins).
  • Preheat oven to 180°C fan-forced.
  • Pat dry, rub with oil, season well.
  • Sear 2 mins per side in a hot oven-safe pan.
  • Cook in oven: ~1 hr/kg for medium.
  • Under 1 kg: 45–50 mins. Over 2 kg: up to 2.5 hrs.
  • Check with a thermometer: 55°C rare, 60°C medium-rare, 65°C medium.
  • Rest under foil 15–20 mins.
  • Slice thinly against the grain.
  • Serve with veg, mash, or pan gravy.
  • Bonus: For fall-apart tenderness, slow-cook at low heat in liquid for several hours.

Are your beefs grass-fed or grain-fed, and where are they sourced?

Our premium beef comes from cattle raised in the pristine pastures of Nannup, in Western Australia’s South West. We offer a mix of grass-fed and carefully managed grain-fed beef to ensure excellent flavour, tenderness, and quality.

Can beef be frozen?

Yes, beef can be frozen. Wrap each cut tightly in butcher’s paper or freezer-safe packaging and store at -18°C or below. For best results, thaw beef in the

How long will fresh beef last in the fridge?

Fresh beef should be consumed within 3–5 days when stored in the fridge at or below 4°C. For longer storage, freezing is recommended.
