How to Cook Sirloin Steak

Take 1 sirloin steak (2.5–3 cm thick) out of the fridge 30–60 minutes before cooking.

Pat the steak dry, then season generously on both sides with salt and freshly ground black pepper.

For pan-searing, heat a heavy skillet over medium-high heat and add a splash of high-smoke-point oil. For grilling, preheat the grill to 230–260°C and oil the grates.

Sear in the pan 2–3 minutes per side for medium-rare, or grill 3–4 minutes per side. In the last 1–2 minutes of pan-searing, optionally baste with butter, crushed garlic, and thyme or rosemary for extra flavour.

Transfer steak to a plate, cover loosely with foil for 5–10 minutes. Slice against the grain and serve with your favourite sauce.

Our lambs are grass-fed and come from a private farm at Treeton, located just 10 km inland from Cowaramup in the South West of Western Australia.
